Reporting it to the police
For a theft that is not in progress, call the national Police Assistance Line on 131 444 (or report online via your state police), which gives you an event/report number. Report the loss in the state where it happened. Then phone your carrier to bar the SIM and block the IMEI - the block propagates across all Australian networks.

Blocking your SIM
These are Australia's carriers - use them if your number is local. If your SIM is from your home country, call your own carrier's lost-phone line instead; nobody here can block a foreign SIM.

Getting back online
Prepaid SIMs and eSIMs from Telstra, Optus or Vodafone require a passport for identity verification (no Australian ID needed); booths and vending machines sit in international arrivals. Travel eSIMs bought before arrival skip the ID check.
